I went through one of my favorite anatomy books "Strength Training Anatomy - By Frederic Delavier (Click Here For Amazon Link)and the 3Dsk (Click here for the 3D.sk site) site and built some anatomical reference sheets that I will be using in the class.
Thse sheets focus on the torso, arms and legs.

these are great ref sheets. Grey's Anatomy is also available online, but for artistic purposes, these sheets will do pretty good (and Grey's can be a little too focused on the medical application)
